If you don't know Huss, you probably will know Rock 'n' chips! This fish is excellent battered or breaded and deep fried, its also wonderful in curries and stews as it holds its shape. My favourite dish involves soaking Huss fillets in Buttermilk, then dredging in a mix of seasoned flour and cornmeal, then shallow fry and serve with home made chimichurri........trust me, it's epic.
